De-gas before or after freezing beans?
Is any difference in quality between:
a) freezing beans when you get them – making a note on each bag of how long they still need to de-gas – and then pulling a bag out of the freezer that number of days before you expect to need the beans; or
b) letting them de-gas before freezing, and then taking a bag from the freezer a couple of hours before you need it (to allow the beans to defrost).
Convenience sometimes suggest one or the other course, but if it makes a difference in eventual quality, I would eschew convenience.
